Will baking soda make the acid go down in your fish tank?

Baking Soda (Sodium Bicarbonate) will temporarily raise the pH of your tank water, and should therefore not be generally used to lower the acidity (pH) of your water. Generally, lowering the pH should be done by adding peat moss or driftwood to your water.
