Why do shar-peis have blue tongues?

The blue tongue of Shar Pei is due to a pigment called melanin.

Most dogs have pink tongues, but Shar Peis have a mutation that causes their tongues to produce more melanin. This mutation is also found in other dog breeds, such as the Chow Chow and the Chinese Crested. This causes their tongue to be pigmented, giving them a "blue" or black appearance.
